Anyone else love a cold cup of creamy eggnog? This is the perfect recipe for my vegan friends as well as everyone else that wants a variation to the old classic eggnog. The powerful thing about homemade recipes is that you control what you want and how you want it. Want it sweeter? Add more syrup, or dates. Want it more creamier? Add more bananas, cashews, or avocado. The possibilities are endless 🙂
The consistency of this recipe is slightly thick, but not as thick as the custard classic. Add more bananas for added thickness if you’d like, although they add a strong flavor that you don’t want to overpower everything else.
Y’all I’m sorry but how do I still get my shadow in my pictures!? I thought I would’ve learned by now, haha. I guess you just forget once you’re in the moment. Can you spot me? All these ornaments I used for the picture, I took off our Christmas tree. This year we did a white and rose goldy color for the palette, and I have to say I LOVE it! It goes with almost any room, and just looks put together and pretty. I’m thinking of going super classic next year with red being the main color. I saw this decorated tree with a vintage red vibe, polka dots, really wavy ribbon going all around the tree.
I was also going back and forth between using all flowers and having them go in a downwards spiral, but it just doesn’t feel “Christmasy”, you know? Although I did add a couple flowers here and there. The possibilities are endless for decorations! The white flower arrangement in the back I made using wall texture spray and glitter. YOU GUYS they are gorgeous! My mom and I were walking through HomeGoods and there was a gorgeous glittery arrangement that we fell in love with but was a little overpriced, so I went ahead and bought some artificial flowers from Hobby Lobby and put it together myself! Looks even better than the HomeGoods arrangement! Anyway, I’ll be gifting it to my mom soon, so shhhh, it’s our little secret 😉
Super quick and easy twist on a beloved classic!
- 2 cups almond milk *or other non-dairy milk
- 1 tbsp agave necter *or other sweetener of choice
- 1 banana
- 1 cup cashews *soaked overnight
- 2 tbsp coconut cream
- 1/2 tsp ground cinnamon
- 1/2 tsp ground nutmeg
- ground cloves
Blend on a high speed blender until smooth and creamy. Serve immediately or store in fridge for up to 2 days. Enjoy!
