This might just be the easiest recipe I have so far. It’s this yummy paste that you can use on anything. The 3 basic ingredients are zucchini, carrots, and onions. Everything else is to spice things up! This is great on toast or as a dip!Peel 3-5 carrots, 3-5 zucchinis, and 1 onion. Roughly chop and cook on medium high heat until carrots are tender enough to easily puncture a fork through, EASILY. This is also where you add spices, garlic, any other veggies you want. I also added a tablespoon of tomato paste and a tablespoon of white distilled vinegar for some acidity. I also added a teaspoon of sugar and salt to taste. Then I threw it all in a food processor and pulsed it until smooth. It will still have a grainy texture from the zucchini, which is what you want! It isn’t called “caviar” for no reason. 🙂 Top a piece of bread with your favorite toppings and go at it! Hope you enjoy!
Delicious as a spread or dip!
- 1 tbsp olive oil
- 3 Medium zucchini *peeled
- 1 Small onion *or 1/2 a large
- 3-5 Carrots *peeled
- 2 Garlic cloves
- 3/4 tbsp Salt
- 1 tsp Sugar
- 1 tbsp Tomato paste
- 1 tbsp Vinegar
Put olive oil in pan. Peel zucchini, onion, and carrots. cut them up into 1 inch pieces and cook in pan on medium high heat for 5 minutes with lid on.
Add garlic, salt, and sugar. Mix and turn down heat to low and cover with the lid. Let cook for another 5 minutes, mixing about every minute. The carrots should be very tender.
Pulse in a food processor or blender until smooth. Serve immediately or store in fridge for up to a week. Enjoy!
