This is the perfect side to any dish! It’s perfectly creamy and only has 3 ingredients!My mom would always make this recipe and it has always been a staple since. It’s definitely a comfort food that’ll make you feel all tingly inside. One thing I will also say is that it’s NOT gooey or sticky, I don’t know if it’s the warmed milk or the type of potatoes, but I know that some recipes turn out sticky and this is the complete opposite. You also can’t be afraid of adding too much milk. At first it might look like a lot, but keep mixing and it’ll all come together, so believe in yourself! Or your mixer! I always believe in my mixer, we’re like best friends.
So simple, so easy, so good.
- 4 Russet potatoes
- 4 Golden potatoes
- 1/2 cup Butter *1 stick
- 1 1/2 cup Milk
- Salt *to taste
- green onion
Peel the potatoes completely. Cut them lengthwise if they are really large. Make sure they are similar in size. Bring water to a boil, sprinkle in some salt and add the potatoes. Leave to boil for around 25 minutes.
Strain the water and put the potatoes in a stand mixer (or you can do this by hand). Turn on the mixer and 'mash' the potatoes until they are almost smooth (about 3 minutes).
Add in the butter, stir until they are absolutely NO LUMPS. This takes about 5 minutes. Meanwhile, warm the milk in the microwave for about 1.5 minutes.
Keeping the mixer on low, stir in the milk into the potatoes SLOWLY. Scrape off the sides and bottom if needed. Add salt. Mix until smooth and desired consistency is achieved. Enjoy!
I used 4 golden potatoes and 4 russet potatoes for this recipe. The golden potatoes were relatively smaller than the russet potatoes so all in all this would equal to about 6 russet potatoes or 10 golden potatoes.
