If you like adding lemon to your tea or smoothies, this is the one for you. There are 2 way to make this: you can cut off the lemon peel which will leave you with a runny kind of syrup, or you can keep the lemon peel on (which is what I do) and it will leave you with a more textured syrup with a bit of bitterness. I personally like to leave the peel on because the entire peel (the zest, the white pith) contain more concentrated amounts of different vitamins. You can research all of that jazz if you want ;). I don’t know if this would even be called a recipe. It’s just equal parts sugar and ground up lemon. About 8-9 lemons would make approximately 5-6 cups. Honestly I didn’t even know what to call this concoction! It’s not a preserve, or jam, or jelly, it’s just the simpilest thing in the word that will add so much flavor in your life. Sometimes I just mix it in with bottled water and it’s great! I would like to sometime try to make this with honey. I can imagine it turning out equally as good as this recipe, maybe better! - 8-10 lemons * with or without rind
- equal parts sugar * around 2 cups
Cut lemons in fourths then pick out the seeds. Or you can keep the seeds, it won't really be noticeable.
Grind the lemons. I used a KitchenAid grinder attachment and it was super easy and quick. You can also try using a high speed blender or a food processor.
Measure the amount of ground up lemons and measure out the same amount of sugar.
Mix in the sugar and store in an airtight container or jar in your fridge for up to 5 years.
