COCONUT BUTTER!!!!! Shout it from the rooftops because you can. 🙂 Only one ingredient 😉 The super secret ingredient is coconut. SURPRISE! The key is that it can’t be sweetened or it will not work. Just plain coconut flakes. All you do is use an immersion blender to get that buttery texture. It will have a slight graininess to it, but I promise you will survive. Of course the longer you blend, the smoother it will get. I spent about a good 30 minutes blending until it was creamy and smooth, so just be patient. The key is to get through those first 10 minutes, then it’s just blending. I also noticed that my immersion blender became really warm halfway into it so I took a break for about 5 minutes until it cooled down and was safer to use. Once you’re done blending, transfer to an airtight container and store it in your pantry or fridge for up to a couple months, unless you eat it all. Which we did in the first week! Also and important note is that it’s easier to blend the coconut when there is more of it, especially if you’re using a high-speed blender- a blender would be way easier than an immersion blender because it does the work for you, whereas an immersion blender requires a bit of elbow grease 😉
