Everyone has different versions and little things they do with this salad but this is what I’ve found to be my absolute fave! It’s sooooo easy to make and is always a crowd pleaser 😉
All I did was mix the broccoli, red onion, bacon, and cheese and then made my super simple classic coleslaw. There’s a lot of things you can do with this! For example I added craisins, pumpkin seeds, some chopped cauliflower. You can add herbs, nuts, spices, anything your heart desires 🙂

- 2 Small heads of broccoli around 5 cups
- 1 cup Bacon, chopped, cooked around 5-7 slices
- 1/2 cup Shredded cheese
- 1/2 cup Red onion, chopped about 1/2 a large onion
- 1/2 cup Mayonnaise
- 1/4 cup Apple cider vinegar
- 1/4 cup Granulated sugar
- Salt and pepper to taste
- 1 cup Cauliflower, chopped
- 1/4 cup Craisins
- 1/4 cup Pumpkin seeds
- Ranch seasoning to taste
Chop up bacon into little pieces and cook.
Mix all salad ingredients as bacon cooks.
Mix all coleslaw ingredients with a fork and add to salad.
Add salt, pepper, and ranch seasoning to taste. Mix well and serve.
I used "Mexican Style" cheese, but you can substitute that with any cheese you want.
This salad can stay in the fridge for 2-3 days.
