Sooooo excited to share this recipe with you guys!!! It’s my mom’s famous beet salad! Beets often times get overlooked, which sucks because they have such a fun color, earthy flavor, they’re easy to cook, they go with almost anything, should I go on? Anyway, this salad is one of my personal favorites and once you make it, you’ll understand why. For the beets, you can buy sliced canned beets, or you can boil 2 beets for about an hour, peel them, then dice them up yourself!
Earthy, with the perfect balance of flavors!
- 4-5 cups boiled and chopped potatoes
- 2 cups cooked beets *diced
- 15 oz can red kidney beans
- 15 oz can pinto beans *or other bean of choice
- 1 cup sauerkraut
- 1/2 cup chopped onion
- 1/2 cup chopped parsley
- 1 cup chopped pickles
- 1/2 cup oil
- salt to taste
Mix all the ingredients except the oil, then stir in the oil and serve! Enjoy!
